siamensis を検出した。メタゲノム解析により発酵したハチミツの真菌相は,Z. siamensis が99% 以上を占めていた。一方,セイヨウミツバチおよびニホンミツバチの未発酵のハチミツでは,Z. siamensis が存在しないか,低い割合となっていた。次世代シーケンサーによりZ. siamensis の全ゲノム解析をおこない,核ゲノムは約100 Mb,ミトコンドリアDNA は約2.1Mb であった。ミトコンドリアDNA の7 個のタンパク質コード領域およびITS 領域の遺伝子を用いた分子系統解析の結果,Z. siamensis が独立種で,Z. mellis が姉妹種であることを確認した。発酵したハチミツは,ミツバチの必須アミノ酸であるフェニルアラニンが増加していた。これらの結果から,ニホンミツバチのハチミツに含まれていた酵母Z. siamensis
